Sustainable fishPollack was once seen as only suitable for cats, but is now a favourite of celebrity chefs due to its green credentials. Salmon, cod and Haddock sales dropped by 10% last year, whilst Pollack went up more than 150%. Seafish, the government's Sea Fish Industry Authority, said the increase may be driven by consumers making choices arising out of concern for the environment and a demand for locally sourced food: "Choosing alternative species helps to ease the pressure on stocks of more traditional fish."
